I am in a chili contest this weekend and my wife tells me that people love beans in chili. Well I do not and I have never put beans in my chili. But I want to hear what WB thinks.

I agree with everything you said, except for the cornbread, I prefer regular saltines. And maybe some sour cream.

I like my chili with ground turkey and beans, not too hot, but hot enough to clear the old sinuses.

If you're worried about gas from beans use Beano when preparing them.

I always had beans in my chili, but i'm thinking that it might be good without beans. Like, it would be different tasting but its like, less filler. Its like how i like to eat salad without lettuce...i just want the good stuff. Yeah, so just make chili with meat, it will probably help you out in the end now that i think about it. I like it with beans too...

What kind of meat are you using???

3lbs of flank steak or stew meat
4lbs lean ground beef
1 1/2 lbs ground pork.

1 large onion
1 red pepper
1 yellow pepper
2 tbs garlic
1 can tomato paste
3 cans diced tomato
6 oz. Peach Snapple
1 cup chili powder (added to meat when cooking)
1/2 cup cumin (added to meat when cooking)
1/4 cup red pepper ( added to meat when cooking)

when meat is cooked, drain grease, and smimmer onion & garlic til onion is transparent. Add remainder of ingredeants & simmer for 3 hrs. Add snapple in last 45 min.

I love the spicy, the problem is that the chili needs to be palatable to a wide range of tastes, so I have to tone it down.

Make some, you will love it. cook the meat with the chili powder, peper & cumin. Don't dump the spice into the pot after the tomato and onion are added. The meat will have a lot of the Chili flavor and it will tenderize the meat as well.

I won't lie that putting beans in is kind of a filler and a way to keep the cost down. ALL MEAT is expensive, but I just love beans so I would miss them if they were gone.

Good answer... Real chili has real meat not just ground beef.

How do you cook the flank steak (fry/grill/broil)? do you dice it or shred it??? I think that I like it better shredded.

I usually add some sausage to give it a little extra flavor...

Done it with a hand shredded Filet Mingnon, fried up with the spices, peppers, and onions in a pan with a tablespoon of extra virgin Olive Oil.
shit basically dissolved in the oven.
Ok how long in the cooker?

I like you recipe there Turtle but would add beans and soak them in Southern Comfert overnight. And all chili needs hot sauce I understand competion you have cool it down. But no chili is complete without a few drops of Dave's Total Insanity...

I went a got a can of kidney beans... and I'll put them in.

Few points on chili.
1. I love hot chili, but most people like a milder chili so to win I'll need to tone it down.
2. I cut the meat into one inch cubes and cook them in the pot and add the chili powder, cumin & redpepper to the meat and let it simmer for about 30 min. I think the chili flavor in the meat and the spice in the meat make for a better flavor.
3. The 6oz of Peach Snapple at the end put a very slight sweetness to the flavor, most people notice it but can not id. the taste.
4. I've heard about choc. in chili before but never got a good grasp on quantity so I never gave it a shot.
5. And I agree with Joey DVD that cheese and cornbread go great with chili

Call me crazy i dont care but try this, when ya cook a burger use taco bell hot sauce,, one package per flip cook it in,,, turns even the shittiest burgers into awsome. Didn't see this thread until today. But I just wanted to give my input on the Beans or no Beans. You have to have beans.

When I make mine, I use more of the Frijoles Negro Beans And maybe one can of the Kidney.

The black Negro beans taste better and thcken up the chili better.

Anyway, good Job on placing though Turtle!

Chilli is definetly regional... texas and official contests are no beans... me I prefer beans specifically dark red kidney beans in mine. They absorb the flavor the best and maintain texture. Hot dog chilli is no beans. Weird IMO, is cinncinatti chilli because it has cinammon in it served on spagetti.

Hot as hell of course, chocolate definelty helps the counteract the acidity of the tomatoes... I prefer a couple of oreos.

Another variation that's not bad is chilli verde... green chilli... lots of jalapenos and tomatillos.

I would say, it completely depends on the chili. Green chili, no. Mexican red chili, no. Texas chili, depends on your definition of "texas chili" but typically, in texas, I think the answer is no.

As a fifth generation Texan, I was repeatedly told by my grandmother, "If you put beans in chili, you don't know beans about chili". Having emigrated to Tennessee, I ended up putting beans in chili to appease my wife and now actually prefer it. The compromise was made so that I wouldn't have to put fucking ground beef in the chili. That to me was more upsetting than beans.

psssssst, coonasses like to put the same ingredients in everything. I've had people make chili and put celery and okra in it and it wasn't the best.

I know I give you shit but I agree 100% with you there. Mushy celery and okra in chili just sounds bad.

Keep it to meat, spices/peppers, and a little bit of beans. Simple is better for chili.

Do black people in New York even eat okra? I thought that was more of a southern thing than a black thing. I thought northern black folks ate the same thing everyone else up here eats.

If they moved up here from the South, then there is a good chance they eat okra. Myself, I was never a big fan of iokra.
