Here are my Favorites that I find myself using all the time.

1- El Yucateco Red 5000 - 6000 S.U.

Great as a condiment or to heat up Chilis and Sauces.

Adds heat to anything. Holy shit hot and readily available in the supermarket.

3- Huy Fong Sriracha 2,000 - 3,000 S.U.

And of course Franks Red Hot for wings and Tabasco for Pizza and Eggs.

I like the Asian rooster stuff but, my all around favorite is Tennessee Sunshine. Not necessarily the hottest but very flavorful. Also have the usual Tabasco / Frank's / Pete's for general usage.

Down here Southerners eat a sauce from Louisiana called "Crystal." It's one of the best tasting sauces because it's not just loaded down with vinegar like some other sauces. My mouth is actually starting to water for some fried catfish with Crystal sauce from thinking about it. But unfortunately I live in North Arkansas and these folks are some useless fucks when it comes to food. They don't have any Southern food.

ive had to lay off the hot sauce for the last couple years, because of my cantankerous tummy, but i do like the gook chicken sauce posted above, im a big fan of making my own also so i can control the heat, i have a bottle of "daves death x2" that shit is so fucking hot i put it on things that i dont want the dog to chew on

I don't get these gimmick "Flaming Sphincter" sauces. Once you get past a certain heat... and all of the atomic gimmick sauces are way past that point... all you get is pain. Pain is not a flavor... so one bottle is pretty much like all the others... brand isn't important if they're all just pure pain. If you don't care about flavor, then what's the point of it? Why not just pour lighter fluid on your tongue and set it on fire?

Usually people use something that hot as an additive to food, not directly on food to be consumed. The flavor is provided by the rest of the dish. I never buy anything hotter than the stuff I listed above. 10,000 Scovilles seems to be about the threshold of pain for me. That bomb sauce above is 10 times that.

There's nothing I hate more than shitty gimmick sauces. I went to some famous Tex Mex joint in Washington DC once... can't remember the name... so I order up some Mexican grub... chimichangas or something. So the food comes out and I grab a bottle of the restaurant's "signature sauce"... all sorts of warnings on the label about how hot it's supposed to be, a picture of a bull's skull, a cutsey sombrero cap on the bottle, a bunch of copy on the label about how "world famous" and "authentic" the sauce is... Their website is listed in case you want to order a case of the wonderful stuff.

I try it... and it's nothing but shit.

Seriously... it was pepper seeds suspended in oil and vinegar. It was fucking disgusting... it was hot in acidic way, not spicy. It was like oily pencil shavings with a splash of aftershave.

I thought I might have gotten a bottle that had been sitting around open for awhile and gone bad. So I grab an unopened bottle off of another table... same shit.

That'll go to show you what a bunch of ham and egger rubes your average American is when it comes to hot sauce. The fact that this place was still in business serving that shit as their signature sauce is a fucking crime.

What's on the bottle is far more important than what's inside...

"Loco Paco's Flaming Anus Mental Institution Sauce!"... and the bottle is wearing a little straight jacket?! This stuff MUST be fabulous!

"Daves" or "Da Bomb" is basically adding pure heat to, say a pot of chili, without adding any additional "flavor" to confuse things. I've found that if you use A LOT of Dave's in something, you do start getting a flavor that isn't very good, so I more or less stick to Da Bomb now and only use Dave's if I'm out.

You just know that the vast majority of those flaming gimmick sauces are bought as novelties, somebody chuckles at the zany label, and then they sit on shelves unused and forgotten until somebody cleans house and throws them out... or else frat boys use the sauce to torture the naughty bits of their pledges during homoerotic hazing rituals.

They are based out of New Orleans. Good people. And unlike that Texas Pete stuff that someone posted recently, it doesn't have artificial food coloring to make it look red.

I don't buy sauces that use food coloring to look red and spicy.

Had to quote this is light of Flea's choice with the dinosaur on it. Seriously. Look at the good shit. What do you notice? A simple decal or logo. None of that horseshit whacky labreling. It's because some guy who is making good sauce isn't worried about people buying the gimmick. Sure, buy a gimmick for a chuckle. Buy the sauce for the food.

I second that one....I use it more than any other I've ever bought. Just enough heat without sacrificing flavor. At one point I had such a hard time picking it up at stores, I just went to their site and bought a case.

When I can get it, I'm a big fan of Krystal also....love it on jambalaya!

I've had their "After Death" sauce at the insistence of my best friend's stepdad (a Texan through and through). That company seems like a "wokka wokka! sauce" peddler, but there are some "true Texans" at least that like their products.

I was just down in NOLA last week and stocked up on Gumbo File, Tony Chachere's, Peychaud Bitters (mmmmm, Sazeracs), & Camelia Red Beans. I also wanted to pick up some Crystal while I was down there but the store down the street from my hotel sold out over the weekend I was there.

I was surprised to actually find some in my local grocery store yesterday so I'm good to go!

Wish I would have remembered to pick up some Community coffe before I came home though. My first cup of coffee back here tasted like shit compared to what I was drinking down there all weekend. Same thing happened to me the last time I was down there.

Make your own

1 cup Red Wine Vinegar
3 tbs Chipotle Chile Puree
2 tbs Honey
1 1/2 tbs Dijon Mustard
1 tsp salt

Whisk together in small bowl, set aside for 30 minutes to allow flavors to meld.
Use on everything.

I like my hotsauce with a lot of flavor, and not incredibly hot. Some of the super hot suaces out there seem to sacrifice actual flavor, just to be in the "hottest" category.

I once had Endorphin Rush which is like 33,390 SHU (I could of swore it was hotter)
More than hot enough for me.
I would add like a drop to my chili and it would light up the whole pot with heat.

Try it once. I usually just season my steaks with black pepper but sometimes I toss a little of that stuff on there. It really adds a lot to the steak if you don't over do it.

i usually marinate my steak in soy/worcestershire sauce, lemon juice and garlic powder. i'm in the process of emptying my freezer so it will be barren by jun.

if I'm using Frank's Red Hot to make my wings, what I'll do is toss a stick of butter in it (thanks TonyB) to thicken it up a bit, and then toss the wings into it...coats it better, makes it a bit smoother

of course, but i'll add a dash of that crystals xxxta hot that i posted earlier to give it a bit more heat. but franks is a superb base.
