Just thought it would be ncie to have a dry rub and marinde quick reference page for those summer cook outs when your looking for something differrent with your steak, chicken, seafood, or grilled vegitables.

I like to reduce and use it as a glaze, not so much as marinade.
Rub that I use:
Black Pepper
Red Pepper
Cayenne
Paprika
Brown Sugar
Salt (slighlty crushed rock - bigger than kosher)
Cumin
Mustard Seed
Garlic
Onion Powder
I never really measure this stuff, I just make it as needed and adjust depending on the meat.

I second that- except that I sprinkle some montreal steak seasoning on first, then a little butt rub. Comes out nice and spicy!

Lemonade, white wine, cracked black pepper, and a crushed clove of garlic in a large ziplock to marinate chicken is a great low-rent lemon-pepper dish.

It's almost as if this was made for Ant and Jimmy.
I took the one on the tyson package and stepped it up a tad.
1/3 cup lemon juice
1/4 cup olive oil
2 cloves of garlic (I cheat and use the minced stuff)
a couple of tablespoons of dijon mustard
a goodish amount of basil
some pepper for shits and giggles
lay the chicken out in a pan
pour about 3 fingers of cap'n morgans in a tumbler
dump some over the chicken (drink the rest)
pour most of the marinade over the chicken
let it sit for about 20 minutes, turn it a time or 3
toss it on the grill, and baste it with the leftover marinade a couple of times before it's done.

Stubb's Liquid Smoke is awesome too - (just add to bbq sauce).
Here's an easy rub for steaks or chicken.. This shit Rocks.
4 equal parts:
Course Salt
Ground Black Pepper
Brown Sugar
Paprika
