I wanna say Anthony Bourdain, even thou he doesn't cook any more.
But since he doesn't, I'd have to go with Michael Ruhlman (he's not on many FoodTV shows, but he's in the same vein as Anthony in regards to his demeanor and speaking (and he co-wrote "The French Laundry Cookbook" with Thomas Keller...the mecca of food pr0n)) or the great Gordon Ramsey.

My measure is wheather I want to make something the chef/cook has made.
That said...Jamie Oliver. I want to make something from every show he has now. Unfortunately they only post 2 recipes from every show.
In the past, I was a HUGE fan of "How to Boil Water" with Sean Dunellin and Kathy "the Culinary Guru" Lowe. (Not sure if I spelled the names right.) I even cooked with phyllo after watching them do it.
Emeril Lagasse. He may be annoying, but damn that food looks good. I have to see if I can find his recipe for fruit cake.** It was drenched in rum. MMMMMM.
Tyler Florence, Ultimate. He makes some killer stuff.
The only time I ever saw Guy Fieri cook is on a 2 minute commercial spot, so he doesn't count in my book. Maybe I missed his show. (I only started watching the food network again in the last year or so.) I do, however, love the food he talks about on DDD.
I have yet to see Ramsay cook, except to show a cook/chef how it's done. That doesn't count as a TV chef, either.

watch ramsey's other show "the f word" weekends on bbc. he cooks at least three things in the show. plus we meet his wife and kids. and he has celebrities on quite a bit.

Being such a huge fan of the original show, I literally find this one offensive. It's just has nowhere near the charm or entertainment value.

But then I heard Alton on R+F and thought I might give his show a shot. There was a marathon on Food Network that weekend and I watched every minute of that. After that I seriously got into cooking, I don't know how people can go without cooking. I find it very fun.
I also watch other Food Network shows but am disappointed they no longer show Japanese IC.
I find Alton Brown to be meh.
Nice guy, definitely knows his shit, but just too fucking technical for me at times. I just want to learn how to cook a meal, I don't have a hard-on for the SCIENCE~! behind it like you, Alton.

Not sure if you seen the other thread but Fine Living is showing the original IC shows at 11pm nightly - they started this a week or two ago.
The only thing wrong with it is they stripped the Backdraft music out of it so it sounds a bit strange.

When I was younger (like 11) it was Julia Child. She was like the only cooking show on,it was on PBS.The first and cookbook I got was hers,and I still have it and still use it. These days it Gordon Ramsey,not because of Hells Kitchen (though Im learning to love it) but because his older BBC shows.He fuckin rules! I dont think most of the US gets him,but hes a rockstar god in Great Britain.

I grew up with Julia Child, and the Galloping Gourmet since they were the only ones at the time cooking on tv. Later came Jeff Smith who really made food fun and interesting and his explanations on why and what to do taught me alot about cooking. Today hands down it's Alton Brown who brings the same to the table so to speak. Next favorite today would be Lidia Bastianich (sp) she reminds me of my mom and aunts who were amazing Italian cooks.

X2. And off-topic, but speaking of other Japanese shows dubbed to English. I love "MXC" on Spike ("Takeshi's Castle" in Japan) and even enjoy the perverted dubbing. However, ABC is now coming out with something called "Wipe Out" which is obviously a ripoff of that with fat Americans running the events. It looks awful...
Ok, back on topic: I have a man-crush on Gordon Ramsay. Yes, he cooks on the F-Word. My favorite of his are the British episodes of Kitchen Nightmares. You can tell he really cares about those people and you get to see him not only being a hard-ass but being genuinely a good guy.
Also, I would love to spend a long weekend with Nigella Lawson - you know she's a goer.

You can't top ICJ, but I find ICA to be a worthy successor. It doesn't have the over-the-top Japaneseness that made the original so much fun, but there's still some great, creative food being made there. Plus, ICJ never had a judge as good as Jeffrey Steingarten.
That said, I wouldn't put Flay, Cora, and Symon on the same level as Sakai, Michiba, and Chen, but the're still great at what they do.

As was mentioned, though he rarely cooks, Bourdain is the shit...I can't get enough of "No Reservations." Hands down my favorite TV Chef.
It also helps that I get to pretend I'm him every time I drink, curse, smoke, eat and stumble my way around all the Countries of EPCOT when I go there.
May take some heat for this but, I've learned a thing or two from Flay.

Alton Brown, hes not only a good cook but he knows how to entertain without seeming douchey. One episode hes showing herb mixtures for chefs around the world and theres a chef at his window for each mixture. He says he won't use any of the mixtures and they all start screaming and trying to stab him in anger. It may be silly but it makes me laugh.

Anthony Bourdain (Cool as fuck, and even though not a "TV Chef" he is a REAL chef, and brilliant as a host/author)
Mario Battali (I am not a huge fan of tuscan cuisine, but his methods/recipes ROCK)
I like Bobby Flay on the throwdown show... and some of his less complicated recipes are AWESOME

As I have said here before Ilove Bourdain's work...but have never tried his cooking. Damn entertainingt though.
Would love to try Collicchios and Ramsays food, I just cant afford to on a Paramedics salary.
Batali is in that catagory also.
Flay is a arrogant douch but makes great food (which I just tried at Mesa Grill on Sat night) and is great on his shows especially Throwdown.

Love Bourdain and Ramsay when I feel like watching an ass-kicking chef (although Ramsay can be a complete sweetheart on the UK version of 'Kitchen Nightmares'). Jamie Oliver I like a lot, too, but for a great chef whose actual style of cooking and presenting I find very appealing, I'd have to go for a chef that you may not have seen on TV in the US: Rick Stein.

1a) Alton Brown (Good Eats)
His test shows first aired here on PBS Chicago more than a year before The Food Network ever heard of him. I loved it before I even knew who the hell he was. Problem was, they aired only 2 shows. It was another five years until my cable carried TFN. It was worth the wait. The how and why/science aspect would have drawn me in regardless of how it was presented. The fact that he's always entertaining and fun is just icing.
1b) Americas Test Kitchen
I actually try more recipes from this show than all others combined. (with good success) Every recipe on the show is doable. Plus, they never stop looking for a better/easier/smarter way to cook. I've also been a member of their website for two years. Huge database of recipes, equip. tests and tasting results. When I need equipment or ingredient reviews or tips, it's the only place I trust.
2) Jacques Pepin
The ULTIMATE technician. I have never, nor will I ever, see anyone with better skill. Watching him use a knife makes me cry....and then go practice. He loves to teach and it shows.
I prefer his earlier series because he focused more on technique than food. Now, it's more of a good food fast show. Still, I would never miss one episode. I've never made a bad omelet since he showed me how many years ago. I only wish he would get the same operation on his sinuses that Lil' Yimmy had. Always sounds like he has a cold.
When I was a kid, I never missed Justin Wilson or Graham Kerr. Although I rarely made anything from either show, they were both entertaining as hell. "The Galloping Gourmet" was probably the first cooking show I remember seeing. So this is all Grahams' fault.
I do watch many of the other shows. With the exceptions of Rick Bayless and Mario Batali, none compare with my big three. I also think that The Food Network should be fire bombed so they would be forced to start again. It has turned into a culinary version of cable news. One hour of goodness mixed in among 23 hours of palaver.
That said, I would very much like to give the Aunt Jemimah treatment* to Giada, Aida, Ellie and, (on a sturdier counter), Nigella. Woof!

After watching a few recent Iron Chefs I have to say not a single one of them have a personality except Batali. Hes talking with Alton, has a smile, is giving the judges food/wine, he puts on a show. Flay has no personality and comes off as a dick yet every fucking week hes on there looking like the prick he is.
I think Morrimoto might be fun to but I havn't seen him on the show in ages.
