I just ate a steak and egg sandwich. I trimmed the fat and sliced a piece of steak I had leftover from the other night. Heated up in a skillet with 3 KFC potato wedges leftover from another night. Then cooked two eggs overhard and added some sliced cheddar. I then put it all together on a toasted onion roll. That was some good eats.

Tequila/Cilantro marinated Flank Steak with Chipotle sauce and dollop of orange/chive compound butter, side of risotto with mushrooms.

Tweaking the marinade right now...two skirt steaks bathing in this. Salad and corn on the side.


Tequila-Lime Cilantro Marinade
1 cup fresh cilantro leaves
4 garlic cloves,peeled
1 shallot, coarsely chopped
1 jalapeno, seeded
juice of 2 limes
1/4 cup olive oil
1/4 cup tequila
1 tsp. salt
1/2 tsp black pepper
1/2 tsp. ground cumin
1/4 tsp. ground coriander seed

Place the ingredients into a food processor and process until combined. Place steak in hotel pan, add marinade and cover. Let it marinate for 2 to 4 hours. Grill and serve

Grilled over medium high heat on an open grill until cooked almost completely through. With about 4-5 minutes of cooking time left I dropped the heat to medium, poured about half of the remaining marinade over the chicken, flipped it over and covered 'em with the rest of the marinade. Close the lid, cook for 2-3 minutes. Flip 'em again and cook for another 2-3 minutes to cook the glaze onto the chicken.

Garden salsa made with a base of yellow pear tomatoes juiced in a 1 cup food processor, chopped sweet 100 and grape tomatoes, diced banana, sweet and bell peppers, diced vidalia onions, cinantro, fresh milled pepper, salsa seasoning, a squeeze of lemon juice and a few dashes of hot sauce.

Its French bread, sliced thick but not all the way through, some kind of butter, garlic, onion and swiss cheese spread on the inside and on the outside the top is covered with thick sliced bacon and then its thrown in the oven to cook the bacon. I just knocked down the last two pieces. It's so fucking good I am emotional now and crying just a bit.

The dog and I just wolfed down a midnight Fillet Mignon with a side of Lays Potato Chips...

Rubbed some olive oil on the fillet and generously coated it with kosher salt and fresh ground black pepper. Seared all sides in a slamming hot pan then threw it on a cookie sheet and under the broiler.

Did a quick pan sauce by deglazing with some red wine and a little butter.

One of the best steaks I have ever eaten...I was STARVING and the fucker was perfect.

Pan seared and under the broiler with a quick red wine pan sauce like last time. instead of a bag of potato chips, I went with some bacon wrapped asparagus stuffed with mozzarella and some pesto roasted potatoes.

It needs a garnish for sure and I could have been more creative with the sauce instead of just drizzling over the top.

I was going to chifinade some red bell pepper and either do a little nest on top of the steak or sprinkle over the potatoes but, I was drunk and starving so I said fuck it.

Probably going to do the same dish for Christmas dinner so consider this the "before" shot.

Bacon wrapped asparagus is stuffed with Mozzarella (mootzadell). It's REALLY, REALLY good.

Partially cook the bacon in oven (about half way-on a cookie sheet with parchment paper).

While that's going, drizzle asparagus with olive oil and sprinkle with kosher salt and cracked black pepper. Toss so they are all coated.

Cut mootz into sticks.

When the bacon is half cooked and has cooled a little, lay a strip down and place two asparagus spears on top, a mootz stick on top of that, then a 3rd spear on top of the mootz. Roll and wrap like you're taping a baseball bat handle, overlapping the bacon just a bit.


You may have to do a little math figuring out how many spears per bacon strip and mootz sticks. I do either 3 or 4 spears per bundle.)

Have another cookie sheet lined with parchment paper ready and place finished bundles on there as you go. They should have a triangle type profile, with the last edge of bacon seam side down. You'll have to fiddle with them a bit to keep the cheese in the middle of the bundle.

Once they are all assembled, grind a little more fresh ground pepper over them.

Usually, I have the oven set around 375. If the cheese is melting too much, I'll pull them out of the oven and let it cool for a couple of minutes (the cheese cools fast) and then pop them back in as I'm finishing up the rest of the meal.

freshly caught salmon fillets, marinated in Lawry's(I'ver never heard of it either) "Sesame Ginger with Mandarin Orange Juice" marinade.(about five hours) 20 minutes baked in the oven.
It was fucking phenomenal.

Sides were Herb & Garlic rice and fresh broccoli and cooked spinach leaves with a bit of hardboiled eggs.

Olive Oil rubbed on to meat
Salt
Pepper
Heat Pan to hot pour in some olive oil and swirl to cover pan.
Drop in meat and reduce heat one level.
Sear on one side, flip and sear the other side.
Add Butter and 1 fresh garlic, finely chopped, clove.
Tilt pan and baste meat with juice.
In a seperate pan mix 1 cup milk, half stck of butter, and a package of Bearnaise sauce and bring to boil over medium heat.
Finish cooking meat, cut in half, place on dish, add salt and pepper to taste, drizzle Bearnaise sauce over and eat!
