Whatcha got? And how many is too many?
I have a Henckel Professional "S" right now that's about 5 years old. I dig the knife but, I bought it without really comparing it to anything else and it's getting kinda beaten up. I also have a "culinary school" knife set which, while very sharp, I just don't care for.
Thinking of upgrading...maybe Shun (forged) or Hattori (NOT the $1500.00 handmade ones). Anyone have any experience with these?

i use a chinese cleaver that my wife bought me about 15 years ago , its a henkel that was endorsed buy "martan yan" his name came of years ago but its razor sharp and handles most of my needs, i also LOVE my gunsue knock off chef knife for bread. thats really all i use

My lady bought me a knife set from Kohls department store for $150.00. I would have much rather she took me to a restraunt and bought me a meal from a respected chef with a proper knife set.

Most prefer forged knives, where the metal runs the entire length of the knife (blade & handle).

We butchered a big hog today with a variety of Forschner, Henkel, Case, and Victorinox knives. Tomorrow we'll use more of the same to cut it into market cuts, along with a bandsaw. The Forschners seem to keep an edge really well.

We haven't splurged on a nice set of knives yet, but my wife got a few decent ones from Pampered Chef parties that I like. My bro-in-law who is the typical pretentious chef acts like he's Eric Clapton forced to play on a toy ukelele everytime he cooks at our place, but they get the job done.
I don't like the santoku....I looooove it!

I get into the knfie thing as well. I have a Henck set, a few stand alone Case Knives that my Dad bought years age.
Just got a set of Tramontina Steak Knives at Costco for 19.99. They are the full bodied, half serated, half regular blade, full tang with the nice wood handles. Like the ones used in nice steak houses. 8 to a set. I like them, but need to replace the BBQ so I can work them on a steak.
Oh, another reason I got them, made in Brazil, not China

I'm not really a fan of the santoku but, I used one on my last knife skills test and did pretty well. I was able to get more precise, straighter cuts but, I can't rock it like I can with a standard chef's knife....the blade is too flat on the santoku.

i have Cutco knives which were owned by my grandfather. they are over 30 years old and were left to me. they are still great knives. the company will actually refinish and sharpen them for free b/c they have a lifetime guarantee. i hope to some day pass them on to my kids.

I know what you're saying...I noticed that when we got the Wusthof for our wedding but I'm not taking knife skills test. I've seen some more recent models with a rounded tip so you can get that rocking motion and still have a santoku.

The Kyocera Kyotops are really nice. You can't really apply any torsion at all they're only for chopping / slicing. But they stay sharp as fuck and the damascus ceramic looks cool too. They're a little on the pricey side.

My ex got to keep the shun knives that I got her a few years ago. I would have fought much harder for those than the dog. Loved those knives. She has the 7" santuku and a paring knife. I have a few henkels that I havnt used in years when I got her the shuns. The interesting thing about the shuns is that they have a d shaped handle that is meant specifically for right or left handed people. The ex was a righty, and I am left handed, I was still able to use it but it definetely felt a little weird.
My brother who is a chef has a hodge podge of knives. A few globals, a few wustofs, a few others that I have know idea about.

I have the 17 piece Henckels Fine Edge Synergy set with the graphite block. It's sharp as fuck and easy to keep that way with the included steel. Plus the black/stainless steel look goes with my kitchen better than the traditional look of hardwood blocks.

Everything Global makes. They won't break your budget, it won't go crazy when you re-sharpen it, and you won't cry when the blade breaks.
I've had my 6 piece set (boning, offset, serrated, cleaver, fillet, and long blade) for over 10 years now nad they've never done me wrong.

Best bang for the buck on the planet. Anyone who watches "Americas Test Kitchen" knows all about it. I also use their paring, bread knife and 7" filet.
2) Mac
Best affordable/available Japanese steel. Unless you are a pro or a complete blade nut, you will not need anything sharper.

I have to disagree. I have several Globals, and while they are nice and sharp in the beginning, you really have to maintain them. They also get uncomfortable to work with if you use them all day every day for kitchen work.
I broke my first global, an 11 1/2 in chef knife while cutting iceberg lettuce. The blade hit the core and snapped right at the handle. they were quick to get me a new one though.
I think the best knife I have used is a 10" Tojiro gyuto. easy to maintain with a whetstone and kept a pretty nice edge.
but for the money, the best knife I have had was a 10" Connoisseur chef knife. that damn thing only ever needed honing and I used it every day chopping vegetables and fruits for a hotel buffet.
I eventually gave that one to a guy who got promoted to the line and didn't have any cutlery. I figured it was a good starter for him.
