I'm a big fan of grilled peppers. This is a little involved but the peppers come out real nice. Give this recipe a try:
Get some green, red, orange or yellow peppers
Grease the grill grate w/ Olive Oil or regular Vegatable oil
Turn head up to medium/hot
Grill peppers evenly on all 4 sides until black but not completely charred (you'll know the difference when you peel them). this should take 20-25 min
While peppers are grilling - make the marinade:
2 Tablespoons of Extra virgin olive oil
4-6 Tablespoons of Balsmic Vinegar
Lemon Juice from 1 whole lemon
Chopped fresh Basil (4-6 leaves should work - whatever you like)
Salt & Pepper to taste
Wrap Each pepper with wet/lukewarm paper towels and cover with plastic wrap for 10 min). This helps trap heat and makes the peeling process easier.
Take peppers out of the bowl, chop off tops, pull out pits (they will be steaming hot so be careful). Skin should slide off the flesh. If not, then use a knife. Chop peppers and throw into strainer to drain excess water
Serve Peppers Hot and drizzle marinade ontop of peppers
OR
Pour marinade and peppers in a bowl, refrigerate and serve cold later on.
