During last weeks "Quick Fire Challenge", there was a quick shot of him working his knife....one of the sickest things I've ever seen....It was literally a short, attacking burst....brrrrrrrrrrrrt, like a dozen cuts in a second....wow.

Anyway.

I was looking around youtube to see if I could find a clip of it or some of his other work and found this video.....really cool.

No homo, but I'm seriously digging this guy.

I've never seen him before. Looked like he was working with liquid nitrogen in some of those clips? Can't think what you'd do with that in a kitchen.

I know some chefs use it for their ice creams and sorbets.


The faster you freeze the molecules, the smaller the ice crystals and that means a smoother texture.

I am surprised though that he hasn't asphyxiated himself by using so much N2.
