Mics you can't go wrong w/ Shure brand. You'll probably just need a set of dynamics style. About 100 bucks each X 8
Three prong mic cords. Price for these will have to do with length. Longer = more expensive. Don't go over 100 feet w/ out a direct box to keep the signal hot.
You can get decent 8-12 channel mixers w/ phantom power built in (if need be, but since you'll be runing dynamic mics you won't need it). Cords cost goes by length.
Mix board: Mackie is great pro gear, but your having meetings not recording best selling albums. Alesis brand is nice and decent cost. I used to have mackie and loved it, but like I said you just are doing a set up for speakers. 8 Channel at leaset since you mentioned you have to have 8 speakers at once. I'd recommend your best bet getting a 12 "just in case" and you can make a nice pannel of people for discussion that way.
Amps PA can be different wat set ups. You'd have to bring me a choice to figure that one out.
If possible have the control/mixboard set up infront of the speaker system somewhere so you can make adjustments on the spot. Like at the back of the room opposite stage front.
