For instance, if you knew Vader was Luke's father, would it have been as impactful? If you knew the chick at the end of The Crying Game was a dude, would it be as shocking? If you knew Bruce Willis was dead the entire movie, would the movie be as entertaining?

No it does... Instead of going along for the journey leading to the end, you're now like "How do they get there?" You're taking yourself out of the storytelling and are now focused on how you get to the end. That feling is better suited for a repeated viewing, not your first one.
