Yea so I smoked beef ribs the other day, they were so disgusting that even the dog didn't want them.

I fucked up, I mixed short ribs and long ribs, the short ribs were almost edible, but the long ribs were just charcoal, I want to get a big batch of long ribs and just grill them, I like chewing the meat off the bone even if it's a little tough. But, I have to go to the ghetto to get them

There you go...Paired with a 2012 Château Barde-Haut...I decided to crack open one of my $30+ reds :) and of course nothing tops Kraft mac and cheese with it...My kid eats like a king tonight.

Great smoke ring. Looks slightly dry, is it?. What was the internal temp? How long did it rest for before you cut it?

I rested it for 3 hours in the oven (off) in foil. It was dry on one part on one end of it that had very little fat but 90% of it was fine. It came out great with the rub I used. I usually use salt and pepper but decided to try a classic bbq rub and boy did it work great. I have a 50:50 ghost pepper and classic bbq sauce mix that is perfect with it...

The Bacon Explosion from start, middle, and finish. 2lbs of Italian Sausage with a pound of bacon, rub, and barbecue sauce rolled up in a one pound weave of bacon, smoked until done, and then glazed with more barbecue sauce. It’s my contribution to a Super Bowl party tomorrow.

Last weekend my old man told me about someone on one of those facebook yard sale site that had a smoker for free. It was almost an hour after the post went up, but i decided to venture out and see if i could find it. I am now the owner of a propane vertical smoker, with no legs. I suppose I can set it up on bricks or cinder blocks. I have to clean it yet. With wedding/graduation season here, I am now working 6 day weeks and just don't have the time.

Cinder blocks will be fine, I bought a giant corned beef from Costco I’m going to make pastrami probably for the 4th of July

Here's the key to beans with smoked meat...however much meat the recipe calls for, quadruple it.

I made pulled pork last month with my smoker using some Corky's BBQ Rub that was gifted to me by the Memphis restaurant. It goes up to 11 when you smoke it with that rub. So delicious.

Are these pellet smokers with the temp controller any good? I found this one locally so I could get a feel for it - It's all pretty sturdy, not thin sheet metal but has some weight to it. I've read a bunch of reviews (holds temp close, doesn't come close to holding temp, etc.) seems like the haters don't know what their doing, not taking weather into account, etc.

I know I'm not getting something I have to babysit every 15 minutes. I just want to do some pulled pork, ribs, briskets, and maybe a turkey at the holidays. Figure this, with a temp probe for the meat, and I'd be off to a good start.

My brother has one of those Traeger pellet gizmos, and it works well except in cold temps where it struggles to keep temperature... I guess that isn't a problem you will have in the south west.

That "Amazing Ribs" website is great. I'm going to pick up this one this weekend if Sportsman Warehouse has it in stock.

Good reviews, easy to change pellets and clean out the fire pot. Yeah, I don't think the cool weather will be an issue here - maybe get a welding blanket to throw over it if it's freezing and I still want to cook.

I have a giant corned beef I bought at Costco a while back, I can’t decide if I want to smoke it or just make it in the instants pot, I’m leaning towards smoking it but the last time I made one it was way to salty for me, but my wife loved it
